The clean label

What is the clean label?

The clean label trend responds to a growing consumer demand for more genuine and authentic products. This is reflected in the rise of 'free' products. Labels must be short and free of all superfluous and controversial ingredients such as additives, artificial colourings, flavourings and preservatives, pesticides, palm oil, antibiotics and GMOs... Only the ingredients that are essential to the manufacture of a product are kept! The clean label therefore consists of purifying the list of ingredients but does not necessarily imply the notion of naturalness.

Chicken Risotto with Mushrooms

 
  1. Pre-cook the rice in boiling water and drain. Cool the rice quickly.
  2. In a sauté pan, melt the ProBase™ Chicken Fat and brown the shallots and chicken.
  3. Deglaze with white wine and add the mushrooms.
  4. Ajouter le riz, les Savorboost® U et Savorboost® V, l'eau, le poivre, le NaturFORT12 DRY, le Bouillon de Poulet ProBase™, le CulinairEx HZ002PK et le Savourex CR010P.
  5. Reduce the mixture and add the cream and the Lactosan Parmigiano-Reggiano PDO.
  6. Add the parsley at the last moment.

Vegetarian steak

 
  1. Mix all the ingredients in a food processor until you get a homogeneous paste with some lentils and beans.
  2. Form 130g steaks.
  3. In a cooking cell, cook the steaks at 160°C for 45 minutes.
  4. Vacuum bag the steaks (95% vacuum) and pasteurise them (85°C core temperature).

  1. In a saucepan, sauté the leek, carrot and diced onion until lightly colored
  2. Ajouter l'eau
  3. Ajouter le Bouillon de Boeuf Probase™, le clou de girofle, la coriandre, le piment de Cayenne, le sel, la citronnelle, le sucre, l'ail en purée, le CulinairEx HZ002PK et le CulinairEx VO001 PK.
  4. Bring to a gentle simmer and then turn off the heat.
  5. Leave the ingredients to infuse for 1 hour before straining the broth.
  6. Dose in bottle.

Vegan coconut cream on a bed of exotic fruits

  1. In a saucepan, heat the mango mash, passion fruit mash, sugar, Savorboost® K-DY, apple fiber and agar.
  2. Bring the mixture to the boil and pour into the bottom of the verrines.
  3. Set aside in a cool place to allow the fruit coulis to set.
  4. In a saucepan, combine coconut milk, agar, Apple Fiber AP 200, Savorboost® K-DY, NaturFORT™15 L, brown sugar, Edifett F 72 C and Savorboost® U.
  5. Bring the mixture to the boil and pour over the top of the cooled coulis.
  6. Keep the containers cool.
