Chicken Risotto with Mushrooms


  1. Pre-cook the rice in boiling water and drain. Cool the rice quickly.
  2. In a sauté pan, melt the ProBase™ Chicken Fat and brown the shallots and chicken.
  3. Deglaze with white wine and add the mushrooms.
  4. Add rice, Savorboost® U and Savorboost® V, water, pepper, NaturFORT™ 12 DRY, ProBase™ Chicken Broth, CulinairEx HZ002PK and Savourex CR010P.
  5. Reduce the mixture and add the cream and the Lactosan Parmigiano-Reggiano PDO.
  6. Add the parsley at the last moment.
